Pink golf balls are just fine.
Take at least 9 balls for every 18 holes you think you are going to play!

If it is a new course, take as many golf balls as you can carry. If you have played the course before, just base your decision on what happened the last time. You can always buy more if necessary.
As for the color of your golf balls, use what you are comfortable with. I have a hard time with white as well, mainly because the course I play at is littered with trash, so I try to use a different color.

Take one package, and buy the balls you need at the Pro shop when you get where you’re going. You do not have to use pink if you want to see the balls better. There is bright lime yellow and bright orange, too.

I am a beginner as well and have recently played my very first round of golf on a very difficult course, Apple Mountain in Camino, CA. If you are anything like as bad as I was and if the courses are as difficult as Apple Mountain I would take at least 20 per round.
