Iron them using spray starch.

don’t dry them completely. When the shirts are damp, use your fingers, and curl them the other way, and hang to finish drying

both excellent answers that I would have told you. When the collar is damp, stretch the seams, curl is caused by shrinkage of the topstitching. Yeah, look at the seams of you jeans, the thread shrinks more than the fabric.
suggest ironing from the underside as opposed to the top that everyone sees. Don’t have an iron? simple, heat a small sauce pan on your stove, test for medium heat with your finger (gram used spit, there is a perfect sound to the pssst, that doesn’t burn you) and just press. That means no wiggling of the pan. Careful with poly/cotton blends as they melt.
